Vegan "Goat Cheese"

Been back to my vegan ways for several weeks now! On top of dairy free, I'm also been going gluten free, soy free, sugar free and wine free (gasp!). Feeling great!

This is perfect for spreading on a gluten free or raw cracker. I also like it on my salads! 

Vegan "Goat Cheese"
-makes about a cup-

1 cup macadamia nuts ( soak for about 3-4hrs, rinse and drain )
juice of one lemon
2 tsp apple cider vinegar
2 tsp nutritional yeast
2 Tb coconut oil
3-4 pinches of salt
1/4 cup to 1/3 cup water 

Blend all ingredients except water and oil  in a highspeed blender until incorporated. Slowly drizzle in oil and then water starting with 1/4 cup. Add more water if need be.

Place "cheese" in a ramekin or small bowl lined with plastic wrap. Tap ramekin on counter to make sure all air pockets are gone and then place in fridge for several hours. Remove by turning upside down on a small plate. Yum!!!

Feel free to incorporate other ingredients like chives, pesto or sundried tomatoes.
