Vegan Burrito Bowls

Been having a serious craving for Mexican food these days so I've been making my own version of Chipotle's Burrito Bowl. ( FYI- We don't have a Chipotle on Maui unfortunately ).
Check out my little recipe below...
Spicy Corn and Bean Salsa
1, 14 oz can organic black beans ( rinsed and drained )
the raw kernels from 2-3 cobs of corn
handful chopped cilantro
handful of chopped scallions
1/4 cup minced raw carrot
1/4 cup minced red onion
1 minced jalapeno
juice of 1 lime
1/4 tsp coriander
1/2 tsp cumin
1 Tb white wine vinegar
1 tsp garlic salt ( more or less depending on your taste )
cracked pepper
Toss all ingredients in large bowl until well combined.

To assemble taco bowl layer...
cooked brown or white rice ( I didn't but this would be good! )
chopped romaine
corn and bean salsa
chopped avocados or guacamole
chopped tomatoes
raw vegan sour "cream"
chopped cilantro and green onions
top with hot sauce!

  1. YUM!!! So sad you don't have a Chipotle but this looks even better. You just can't go wrong with corn and black beans.
