Vegetarian Pho

I would make this again just for the delicious frangrance it left in my kitchen! Amazing!

{ Cinnamon and Star Anise ~ Smell absolutely incredible simmering in the big pot of Pho!}

I've never been able to try Pho thanks the main ingredient in the broth being bone marrow. Kind of makes my skin crawl just thinking about it. But the rest of this traditional Vietnamese soup always sounded so incredible to me! I used to swoon over my co-workers large containers of Pho being delivered at lunch time by a local cafe in Lahaina. The fragrance along with the thin vermicelli noodles, ginger and TONS of fresh Thai Basil made me almost cave in and order it myself.

No need now...

I was surfing one of my favorite style blogs the other day ( Sacramento Street ) when I stumbled upon this recipe for vegetarian Pho. Omg! I was so excited I made it immediately because I just happen to have tons of shittake, Thai basil, Star Anise and rice noodles in my pantry at all times. Totally normal.

Carlos and I ate the whole pot in one sitting. It was good! Totally going to be a new staple in this house. I would imagine this would be incredible in a cold weather climate or if you had a bad head cold. It just really warms you up! Especially if you love to lace EVERYTHING with Sriracha like I do!

My daily grinds...

{ Sweet potato stir-fry with corn, black beans, chopped green onions, cilantro, lime juice, hot pepper flakes and sea salt }

{ The Green Juice - Kale, apples, cucumber, lots of mint and lemon }

{ Avocado Toast - made with La Brea Bakery's cracked whole grain bread, mashed local avocados usually from a friends yard, flaky salt like Cypress Sea Salt, hot pepper flakes and a squeeze of lime or lemon juice. }

Just wanted to show you some samples of what I eat on a daily basis...
I tend to lean towards inexpensive whole food stir-fries, large fresh juices made with my Breville Juicer, pickings from the garden or a friend's yard ( like avos, pineapples and citrus ) and I always seem to have some sort of raw vegan treat on hand in the freezer. I also almost always have some sort of massive mixed green salad everyday topped with either "Annie's Goddess Dressing" or this wonderful homemade mustard and maple dressing HERE.

Vegan Manapuas

"Asian Steamed Buns" or as we like to call them in Hawaii, "Manapuas" are seriously one of my most favorite treats. I used to make them all the time as a kid from scratch ( yes I really did ) but it's probably been a good two decades+ since my last attempt.
Unfortunately, vegetarian or vegan versions of the steam bun are impossible to find on island and trust me... I look. Every gas station, 7/11 and grocery store on Maui has a choke selection of pork/beef manapuas sitting right next to the even more common spam musubi and cone sushi. But a vegan Manapua? Shoots....

However, I came across an awesome recipe for a veggie stuffed version on the blog, "Love and Olive Oil" and followed the recipe to a T.  I'm so happy I found this because they turned out savory and perfectly plump!

In the future I'm assuming I could stuff these with about any veggie I want? Next time, I think I'll add some spinach and Hoisin sauce to spice them up a bit. Tons of Hoisin sauce actually...That's how I remember them as a kid. I even have a deep scar on my hand from forcing a jar of Hoisin sauce open while making these. I actually ended up in the E.R. Very typical/classic move by my 12 year old self I should add...As always cooking, always in way too much of a hurry. Sound familiar Carlos?

Just a note: This does take a bit of prep time ( like kneading the dough and letting it rise ) but it is well worth it. The best part is they freeze really well so I had about 2 weeks worth of snacks from just this one batch. I'll be making these again for sure very soon.

Roasted Spicy Maple Brussel Sprouts

I have never in my life had brussel sprouts until this week. I have no idea why? Maybe my parents didn't like them or something but I've honestly never been served them before. Anyway, I saw some for like nothing at the farmer's market last week in Kahului so I figured I'd test them out. Wow! This preparation I came up with was spot on! I can't imagine why anyone wouldn't just love a roasted brussel sprout! So glad I took the chance!
 Are there any common foods out there that you've never tried? I've also never had.... cheese fondue, a steak, pickles ( can't get pass the smell ) or sauerkraut. Random. 

Spicy Maple Brussel Sprouts
( recipe similar to THIS one )
-vegan-
10-12 trimmed brussel sprouts
2 Tbs olive oil
salt/pepper
3 Tbs maple syrup
1 tsp hot pepper flakes
2 tsp sesame seeds
Pre-heat oven to 400. Line cookie sheet with tin foil and spray with oil. Peel and trim brussel sprouts, cut in half and place in medium size bowl. Add 3 Tbs olive oil, a couple small pinches of salt/pepper and toss. Place oiled brussel spouts on the lined cookie sheet cut side up and bake for 5-7 mins.
Remove brussel sprouts from oven and place back into medium bowl. Add maple syrup, hot pepper, and sesame seeds. Toss and then return to oven. Roast another 5-7 minutes until golden brown. Done!




These were delicious with a side of quinoa and grill organic sprouted tofu!

Sweetly Raw's "Moonie Pies"

I've been a big fan of Heather's blog "Sweetly Raw" for a couple of years now. I'm constantly being blown away by her decadent raw vegan creations, food styling and photography!
 Awhile back she created a recipe for a raw Moon Pie and I finally decided to take the time to make them this week.

They truly taste as wonderful as they look! The ingredients are anything but cheap but the recipe makes a lot of bars and I'm assuming they will keep well in the freezer.

Superbowl Sunday

My team got ousted by the NY Giants 2 weeks ago in the NFC Championship Game and I've been a bit bitter ever since. Actually, I've been a bit bitter since 1990 when it happened the first time. I was at that game. Joe Montana was playing. He got hurt. I think that might have been his last game as a Niner? It was truly a sad sad day at "The Stick". I totally remember crying walking back to our car.

So with the Niners out and the Steelers long gone ( a little team I adopted in the early 2000s ) I naturally had little interest in who actually won the game today. But even if your team is out it's always fun to have a reason hang out with friends, have a few drinks, eat a bunch of junk, make fun of the half time show and rate the wacky commericals. Every year seems to get bigger and better and I have to admit, I'm a bit bummed that the season is over. At least I "get" football. I mean, I was a cheerleader after all for about 8 years of my youth. I did pick up some of it. Basketball though? Ewe.

So speaking of wacky commericals....
My favorite ( actually my only ) brother-in-Law, Eron  ( Eza ) Broughton ( an advertising creative in Los Angeles ) had a couple of big ads during today's game! Who doesn't like watching Superbowl commericals? Always fun right! And winning best Superbowl Commerical is almost as important as winning the game. Haha!
