Best Smoothie Ever

Strawberry Lilikoi Smoothie
1 cup coconut milk ( I used So Delicious unsweetend, see pic below )
1 cup frozen organic strawberries
1 frozen banana sliced
the pulp of 2 yellow lilikois ( passion fruit )
liquid stevia to taste ( optional )
blend in highspeed blender until super smooth 
Try it. You'll love it!

Pumpkin Chipotle Soup

I came up with this insanely good Pumpkin Chipotle Soup while paddleboarding on Thanksgiving day. Weird, I know... but with Carlos working Thanksgiving night, I was going to be spending the half the holiday solo. No need to feel bad for me, I had other options that night but after a very long work week I was looking forward to a quiet and lazy evening with my cat reading magazines. Don't judge. National holidays are a great excuse to do absolutely nothing.
So despite feeling a bit anti-social lately, I still wanted to make something "holiday like" for dinner that evening. 
This soup was ridiculous!!! And it literally took me like 10 minutes to throw together. No joke. It was so good that Carlos came home that night and just drank the rest cold! I made it again for lunch the next day AND the next! I'm in love!
Pumpkin Chipotle Soup
serves 3-4
1 Tb cooking oil ( I used organic sunflower )
1 large sweet onion chopped ( I used a Maui )
1/2 Tb ground cumin
1 tsp ground coriander
1-2 chipotle chilies in adobo sauce ( warning: I used 2 but I like it HOT!)
1, 14oz can pumpkin puree ( plain not pumpkin pie filling )
2 cups GOOD quality veggie broth
1 cup light coconut milk
1/2 lime juiced
( I used 2 generous pinches but you can adjust as you go )
chopped cilantro, chives or scallions for toppings
1. In a large soup pan on med/high heat saute chopped onion in oil until translucent.
2. Add cumin and coriander and saute another 30 seconds until fragrant.
3. Add veggie broth and bring to a boil.
4. Stir in pumpkin puree, chipotle chilies, coconut milk, salt and bring to a boil again for about 2-3 minutes.
5. Remove from heat and stir in lime juice.
6. Place soup in a blender ( Be very careful if soup is very hot. Go really really slow with the blender so the hot soup does not explode out of the top. Blend in small batches if necessary to avoid problems. ) I started blending very slowly and then slowly increase the speed. Blend soup until everything is smooth and combined. Taste and add more salt if needed.
7. Top with chopped cilantro, scallions or chives.

Thanksgiving on Maui

Carlos and I spent Thanksgiving morning enjoying small glassy surf at Puamana Beach Park. 
This past Thurday was dark and gloomy but the lack of tradewinds made for some awesome stand-up paddling off the Valley Isle.

Vegan Mushroom Hot Pot Soup

I'm always on the hunt for Asian inspired soup recipes and I think I found another winner!
Check out this delicious vegan Mushroom Hot Pot Soup from the blog, Post Punk Kitchen.
So good! It reminds me of a creamy Pho.
I did make some minor changes to the original recipe ( 4 kaffir lime leaves instead of lemongrass, an extra half of lime, another 1/2 tsp of hot chili flakes, an extra good pinch of sea salt and 1 Tb agave nectar for a touch of sweetness ) However these additions were not completely necessary. For toppings I used, grilled organic sprouted extra firm tofu, Thai basil, and cilantro.
I would imagine this would make a perfect cold weather lunch or dinner if you live in that sort of climate this winter.

November Hawaiian Garden

My garden is changing once again. Come November I notice the pepper plants starting to lose their leaves, the once aggressive mint and basil starting to look "weedy", and the lush tomato plants start to die. Yes, even in Hawaii the edible garden has it's life cycle.
This is the time of year our mixed greens start to fill out and our Italian parsley practically turns into a hedge. Our beloved Kaffir Lime tree is also sprouting new fragrant leaves and our new Key Lime and Meyer Lemon trees seem to grow inches every week. Guess it's time to buy some Rainbow Chard and Bok Choy shoots soon.

Fruity Gazpacho

I still have not been able to figure out my issues with Blogger but I wanted to share this yummy new dish with you! It's a raw vegan ( fruitarian ) soup that I snagged off Megan Elizabeth's blog, This cold gazpacho like soup is so flavorful, light and surprisingly filling! A definite must try if you are cleansing or just looking to make a light and healthy lunch.
