Baked Sweet Potato Wontons

I'm so in love with these. So simple to make, healthy and vegan!

Baked Sweet Potato Wontons
-vegan-
makes about 20 wontons
 
1 medium/large sweet potato/yam
( skinned, cubed and boiled in water until soft, about 10 min )
about 20 wonton wrappers
2 Tbs minced green onion or chives
2 Tbs chopped cilantro
1/2 tsp fresh grated ginger
1 finely minced small Kaffir lime leaf ( optional )
salt to taste ( I used several pinches )
neutral high heat oil
black or white sesame seeds
 
1. Place ( cooled ) cooked sweet potato in a bowl and mash along with green onions, cilantro, ginger salt, and Kaffir.
 
2. Place about 1.5 tsps of sweet potato mixture in the center of each wonton wrapper, wet the edges of the wonton, fold over into a triangle, then pinch to form a tight seal.
 
3. Layer an oiled cookie sheet and brush/spray the tops of each wonton with more oil.
 
4. Heat oven to 350 and baked about 15-18 mins, flipping once.
 
5. Sprinkle on sesame seeds and serve with dipping sauce of choice. I'm partial to a classic shoyu/rice wine vinegar mixture or Sriracha straight up.
