Introducing my latest go-to for dinner these days.....
Spicy Miso Soup
4 cups water
1 small onion sliced very thin
2-3 minced garlic cloves
1" fresh ginger sliced thin
small handful of dried and sliced shiitake mushrooms
1/2 cup dice extra firm organic sprouted tofu
2 tsp soy sauce or tamari
2 tsp raw apple cider vinegar or rice wine
2-4 keffir lime leaves
1 tsp dried wakame flakes
2 Tbs miso ( I've been using Eden's organic Genmai Miso )
Bring water to a boil and add everything but the miso paste. Bring heat down to low and simmer for 5 to 7 minutes. Shut off heat and remove keffir leaves. Stir in miso paste with a wooded spoon until well dissolved.
I then top this soup like a "Pho" and add cilantro, Thai basil, sambal ( or sriracha ) hoisin sauce and a good squeeze of lime juice.
