Aloha Friday ~ 30 Day Fitness Update

So here's to the end of another over the top busy week. I'll have this Saturday off and then it's back to work until next Friday....
Having a full work schedule and trying to fit in an hour of workouts a day has been pretty challenging but somehow I'm getting it done. Unfortunately, blogging, reading blogs, cooking, and doing "nothing" ( my favorite thing to do ) has taken a bit of a backseat but I'll manage. However, I should get into a "routine" starting in October with a more permanent work schedule. Looking forward to that!

Fitness Challenge
September 23: 45 minutes elliptical machine and 20 minutes of crunches and strength training
September 24: 60 minutes elliptical machine
September 25: 40 minutes elliptical machine and 20 minutes of crunches and strength training
September 26: 2 hours of downwind stand up paddling with co-worker. Headwinds were strong!! 1 hour of longboard surfing.
September 27: 1 hour vinyasa yoga
September 28: 45 minutes eliptical machine and 20 minutes of crunches and stretching
September 29: 50 minutes eliptical machine and 20 minutes of crunches and stretching

Again, the surf and wind conditions have not been ideal so I ended up spending a lot of time at the gym...However,  it looks like we should be getting some surf this coming week. Fingers crossed!

Before I go I just wanted to share with a you a quick yummy Fall inspired salad I've been making a lot this week! I've been trying to eat at least one big salad a day and this one has been my favorite so far!

All I did was throw together a sliced Bosc pear, candied walnuts, feta, and chopped dates with organic baby spinach. I then mixed together a dressing made with just aged balsamic, olive oil, maple syrup and sea salt.
So good!

Smitten Kitchen's Naked Tomato Sauce

I found another incredible simple pasta sauce via the blog, "Smitten Kitchen". I swear everything this women makes is gold and this fresh red sauce is no different! She calls this, "Naked Tomato Sauce" for the recipe barely calls for more than super ripe Roma tomatoes. Divine!

Tahitian Lime Bars

If you've been following my blog for a awhile you will know that I'm a bit obsessed with Key Lime anything....Unfortunately, real Key Limes are hard to come by on Maui but luckily the juicy Tahitian Lime thrives out here in abundance!
I ripped out this recipe from a "Coastal Living" magazine a little while back and finally decided to give it a go today. These bars turned out amazing! They are perfectly tart and sweet and the best part is, they are super easy to throw together.

Tahitian Lime Bars
-vegetarian-
makes 24 bars
{ adapted from "Coastal Living" }
1 cup organic salted butter softened
2 and 1/3 cups organic white flour
1/2 cup powdered sugar
4 organic eggs, lightly beaten
1 and 3/4 cups of organic cane sugar
1 tsp baking powder
1/4 tsp fine sea salt
3/4 cup fresh sqeezed lime juice
extra powdered sugar for dusting
First, beat butter at medium speed with an electric mixture until creamy. Slowly add 2 cups of flour and 1/2 cup powdered sugar. Beat until a dough forms and then press into a 9 x13 inch greased foil-lined baking pan. Bake at 350 for about 20 mins until light golden brown.
In the meantime, whisk eggs and then add remaining 1/3 cup flour, sugar, salt, baking powder, and lime juice until combined. Pour on top of short bread and bake at 350 for another 25 mins. Remove from oven, cool and then place in fridge. Before serving, dust with powdered sugar.

Aloha Friday ~ Fitness Update

Time for my fitness update.
Commiting to 1 hour of activity was harder than I thought but I came through! Unfortunately, the surf was down all week and the winds were up so I spent a lot more time at the gym than I had wanted to.
Check it out!
First day, September 18: Stand-up paddling for 1 hour and 20 minutes
September 19:  Coastal hike around Honolua for 1 hour
September 20: Stand-up paddling ( strong headwinds! ) 35 minutes followed by the eliptical machine for 40 minutes.
September 21: 40 minutes eliptical machine followed by 30 minutes of strength training
September 22: 40 minutes eliptical machine followed by 20 minutes of strength training. Plus 1 hour of yard work.

Well, there you go....not bad. I'll update my 30 day fitness challenge next Friday so stay tuned!

Greek Panini

I was STARVING after a paddle and gym workout this morning so I threw this little panini together with some quick ingredients from the fridge.

Wow! This was so good and easy to make in like 10 minutes! So perfect!
 I love!

Greek Panini
-vegetarian-
serves 1
1 torta roll sliced or two slices of thick sourdough bread
1 Tb Greek salad dressing ( or Italian dressing but try to find Greek )
1/4 of a lemon
1 Tb sliced peperoncinis
5 pitted and sliced Kalamata olives
2 Tbs very creamy feta or goat cheese
1/2 cup chopped romaine lettuce
pinch of hot pepper flakes

On one slice of bread pour on dressing and on the other slice of bread spread on feta cheese. Then, layer on olives, peperoncinis, pepper flakes. lettuce and a squeeze of lemon. Next, place on a hot grill pan with a weight for about 3 minutes. Flip and then grill the other side until cheese has melted and grill marks form. You can use a panini press instead obviously. Slice in two and that's it!

So yummy!!

Reset!

Alright, time for a major reset! My three week long training session for my new job is finally over! I wish I could properly celebrate, but I have to get up at 5am tomorrow for my first day....So, no resting just yet!

Anyway, over the last three weeks I put in some really long hours, ate way too much junk food, drank way to much coffee, had very little water, relaxed after work with a little too much wine and I didn't consume 1 green juice! Ewe! On top of this, I barely moved from a sitting position with the exception of one long sunburn inducing surf session and a handful of days on the elliptical machine at the gym. Needless to say, I've pretty much been a total couch potato.

Yuck. I seriously feel like crap and I need to change this ASAP!!
 So, starting today, I'm going to challenge myself to a "30 Day Reset". Winter surf season is just around the corner out here in Hawaii and I need to get myself in slamming shape. So, everyday over the next 4 weeks I plan on doing at least 1 hour of physical activity. This can be anything I want it to be for the weather, wind, and surf conditions change in Hawaii almost hourly. I also plan on eating at least one large salad a day along with either a green juice, smoothie or acai bowl. I going to eliminate coffee, anything with processed sugar and cut down on the vino and dairy!
So who's with me?? Hey, just because summers coming to an end up here in the northern hemisphere doesn't mean it's time to slack off!! Noway! There is surf coming, snow coming ( for those of you that enjoy winter sports), and delicious autumn fruit and veggies about to hit the markets!! I'm super excited how about you?

 Here's my list of daily activities to choose from....

*surfing
* downwind stand-up paddling
*paddle boarding ( laying down )
*hiking the Kapalua Village Course ( very hilly )
* jogging
* elliptical machine at the gym
* vinyasa yoga
* carve boarding ( terra skateboarding )
*Zumba ( if I find the guts to try it )
*Bikram ( same as above )
*ocean swimming or snorkeling
*Kapalua Coastal Hike
*strength training

Alright, that should keep me busy....
Today, I paddled my stand up board with Carlos for an hour and 20 minutes against a strong current and healthy tradewinds!! I'm sore already!!

Aloha Friday ~ Pau Hana

It's been a really long three weeks.
My days are completely blurring into one another and I feel like I have not seen a sunset in a month. I'm exhausted, but hopefully all this training with be worth it in the end.
I had a million things to do after work today but I got sold on bringing my homework down to the beach for a pau hana. I'm really glad I did because it was beautiful this evening....

Mexican Creamed Corn

I've been stupid busy these days...
I'm not kidding. I'm in my third week of training for my new job and the last thing I want to do when I get home is cook!
So, Lucky for me, I discovered this totally quick and easy recipe in this month's "Whole Living" magazine!
FYI-Don't worry if you don't have fresh corn on hand ( like me ) because the canned stuff works just fine.
Check this out!

Mexican Creamed Corn
-vegetarian-
serves 4
 from "Whole Living"
2 Tbs extra-virgin olive oil
1 jalapeno, finely chopped
1 shallot, finely chopped
4 ears of fresh corn and pulp scraped ( or 2, 15 oz cans of corn, drained ) 
1 cup water
1/2 cup low-fat plain yogurt
3 Tbs feta
2 Tbs chopped cilantro
salt and pepper to taste
In a medium sauce pan, heat oil. Then, add shallot and jalapeno and saute for 2-3 minutes. Next, add corn and water and cook over medium heat for about 5-7 minutes. Remove from heat, add yogurt and stir until combined. Add salt and pepper to taste and serve with feta cheese and chopped cilantro. This is great with tortilla chips btw.....
