How to dress like a local: Running errands

I've been wearing this oatmeal colored top with either shorts or rolled skinny jeans a lot this summer. I love it because you can totally dress it up or pair it down depending on the occasion. This last weekend I wore it with some linen shorts to run errands in town. I love it because it gives my weekend standard ( a typical tank + shorts ensemble ) an unexpected twist....

Creamy Corn and Ginger Soup

 A few weeks ago I was inspired by a delicious looking corn and coconut soup recipe on the blog "Choosing Raw".  This Sunday, I finally decided to make my own version...
However, I wanted to give my soup an Asian spin so I added a big chunk of  fresh ginger.
Wow! The combo of ginger, corn and coconut milk tasted incredible!
I ended up using canned corn instead of fresh because I have a ton of it in the pantry. Fresh corn would step this up a notch for sure, but if you want a soup that's really quick to throw together, feel free to use canned. 

Creamy Corn and Ginger Soup
-vegan-
2, 15 oz cans of corn, drained ( or 3 cups fresh or frozen corn )
2 cups of plain almond milk
1 cup coconut milk ( light or full fat )
1 yellow onion diced
2" chopped fresh ginger
1 clove of garlic crushed
2 tsp curry powder ( optional )
1 tsp mild vegetable oil
1.5 tsp sea salt
   chopped herbs like chives or cilantro for garnish
In a large soup pan, saute diced onion in the veggie oil until translucent ( about 5 minutes ). Add crushed garlic and ginger and saute for another 2-3 minutes. Add almond milk, coconut milk, corn, curry ( if using ) and salt. Cook until corn is heated through.
Add soup ( small batches at a time ) to a blender. Blend soup on low and slowly increase speed. Blend until very smooth. Be very careful because hot soup has a tendency to "explode" if blended too quickly in a blender.
Serve soup topped with your favorite Asian herbs.

Aloha Friday~Julia's Banana Bread

I had a random day off this week.
I already surfed, read a "Lucky" mag, and stalked sea turtles in Kahana so I wasn't really sure what to do with the rest of my afternoon?
Then I thought to myself, "This would be a perfect time to go searching for Julia's famous banana bread out in Kahakuloa!" Duh.
So I jumped in the car and headed east on highway 30.
I've heard about Julia's Banana Bread from a few sources and why it has taken me this long to make the 30 minute drive is just ridiculous. Not only is the wild drive beautiful but the quaint village of Kahakuloa is like stepping back in time.

{ Loaves are $6 each or 2 for $10. I bought 2 ( obviously, with Carlos in the house and all ).  I waited until I got home before I dove in.
See that slice there? That was mine. Carlos ate the rest before I even finished this post. Seriously.
And the verdict?
O.M.G. Holy yummy! The bread was super rich and very moist. I highly recommend! I'm so happy I bought 2 now!
I'm thinking the only thing that could make this any better would be topping it with a smear of Nutella.

Raw Reese's "Peanut" Butter Cups

I'm about to change your life. Are you ready?

Raw Reese's "Peanut" Butter Cups
-raw vegan-
makes 9 candies
Adapted from the recipe on blog Gone Raw. However, I made some alterations to the original recipe.

1/2 cup raw cacao powder
3/4 cup raw virgin coconut oil
1/2 cup + 1 Tb raw agave syrup 
1/2 tsp sea salt
1 tsp vanilla extract
1/2 cup raw almond butter
1 pinch of sea salt

{ One of my favorite ingredients ever! }

{ Mix together cacao, oil, 1/2 cup agave, 1/2 tsp salt, and vanilla, until well blended. Then, add about 1.5 to 2 Tbs of the chocolate mixture to lined cupcake tins. Place in freezer for 2 minutes } 

{ In the meantime, mix together almond butter, 1 Tb of agave, and pinch of salt. Remove the chocolate from thee freezer and then place 1 tsp of almond butter mixture in the center of each candy. }

{ Next, Top almond butter with chocolate until covered. Place back in freezer for at least 5 minutes. }

Remove Reese's from tin and keep them in a zip lock bag in the freezer. These could melt fairly quickly at room temperate so eat up!

Bean and Corn Salad with Sweet Lime and Cilantro Dressing

Bowl food is pretty much the standard in our house. We like eating dinner curled up on the couch watching surf videos sometimes so bowl food makes that really easy.
Check this simple recipe out!

Start with 2 different types of canned beans and one can of corn. You can use fresh of course, but the canned type makes this dish a snap!

Then, add some veggies for color...
I chose Hamakua Tomatoes and some chopped cilantro. Chopped avocado would be an excellent add in too!




Now add a dressing....
Balsamic vinegar and olive oil work just fine but today I tossed together a Lime, Honey, and Cilantro vinaigrette. So yummy!

Bean and Corn Salad with Sweet Lime and Cilantro Dressing
-vegan-
2 14oz cans of organic beans ( I chose black and chick peas ) rinse and drain
1 can organic corn, rinse and drain
1 cup chopped tomatoes
1/3 cup chopped cilantro
salt and pepper
Toss together and make dressing...

Sweet Lime and Cilantro Dressing
-vegan-
2 limes juiced
2 Tbs red wine vinegar
1/2 tsp cumin
2 Tbs honey
1/3 cup mild oil ( I used sunflower )
1 seeded serrano pepper ( totally optional )
1/4 cup cilantro
pinch of salt
Place in blender and blend until combined.
 Slowly pour dressing on salad. Toss as you go because you might not need all the dressing. Totally your call....
Serve with brown rice or tortilla chips. Enjoy!
