Bowl food is pretty much the standard in our house. We like eating dinner curled up on the couch watching surf videos sometimes so bowl food makes that really easy.
Check this simple recipe out!
Start with 2 different types of canned beans and one can of corn. You can use fresh of course, but the canned type makes this dish a snap!
Then, add some veggies for color...
I chose Hamakua Tomatoes and some chopped cilantro. Chopped avocado would be an excellent add in too!
Now add a dressing....
Balsamic vinegar and olive oil work just fine but today I tossed together a Lime, Honey, and Cilantro vinaigrette. So yummy!
Bean and Corn Salad with Sweet Lime and Cilantro Dressing
2 14oz cans of organic beans ( I chose black and chick peas ) rinse and drain
1 can organic corn, rinse and drain
1 cup chopped tomatoes
1/3 cup chopped cilantro
salt and pepper
Toss together and make dressing...
Sweet Lime and Cilantro Dressing
2 limes juiced
2 Tbs red wine vinegar
1/2 tsp cumin
2 Tbs honey
1/3 cup mild oil ( I used sunflower )
1 seeded serrano pepper ( totally optional )
1/4 cup cilantro
pinch of salt
Place in blender and blend until combined.
Slowly pour dressing on salad. Toss as you go because you might not need all the dressing. Totally your call....
Serve with brown rice or tortilla chips. Enjoy!
