Soba Noodles with Fresh Peas and Sweet Shoyu Dressing

Still trying to get through that massive Costco size bag of organic peas in the freezer!
Wow great investment! I can't believe how many dishes I can incorporate these little green legumes into. Awesome!
Anyway, here's another spin.... This was so light and delicious Carlos actually stood up and did a little dance after his first bite ( he he ).... I'm thinking this might become a house staple.

Soba Noodles with Fresh Peas and Sweet Shoyu Dressing
-vegan-
2 bundles of soba noodles
1 cup peas ( fresh or frozen )
1/2 cup chopped cilantro
1/3 cup chopped green onions
1 Tb sesame seeds
Cook soba noodles according to directions on package ( about 4-5 minutes in boiling water ). Add peas to the boiling water in the last 30 seconds. Drain noodles/peas and rinse with cold water until cool. Place in a large bowl and add cilantro, onions, and sesame seeds. Toss with Sweet Shoyu Dressing dressing. Recipe follows....

Sweet Shoyu Dressing
-vegan-
2 Tbs rice white vinegar
2 Tbs shoyu ( soy sauce or tamari )
2 tsp agave or honey
1 Tb Garlic Chili Sauce ( example here )
dash of sesame oil
squeeze of lemon
Whisk all ingredients together in a small bowl before tossing with noodles.
