In case you haven't noticed I've been using a lot of Indian Naan bread these days as a side. We just LOVE this stuff! Not exactly bread, not exactly a tortilla, naan is soft and chewy and absolutely decadent warmed up.
One of our favorite ways to use naan is for the base of a pizza.
This is SO EASY and soooooo much better that any frozen pizza you'll find in a supermarket.
We buy loads of naan from Costco ( International Fabulous Flats ) and keep it in the freezer until needed.
Here's the pizza we made last night. Crazy good!
Apple and Goat Cheese Pizza - serves 2
2 frozen naan breads
2 Tb Meyer Lemon olive oil
1 sweet apple ( I used Fuji ) sliced paper thin 
1/2 cup creamy chevre
1/4 cup of walnuts ( soak in water for about a minute first ) this helps the walnuts from burning
fresh thyme
drizzle of honey
cracked pepper
flaky sea salt
pre-heat oven to 375 
Okay this is easy....Take a cooking sheet and wrap it in tin foil. Place frozen naan on top and brush with lemon oil. Layer sliced apples ( in a pretty way ) and top with pillows of chevre and thyme.
Place in oven and bake until apples and cheese have a golden hue. Check the bottom of the naan to make sure it's not getting too dark and crispy. About 12-15 mins
Remove and drizzle honey over naan and add salt and pepper to taste!
This is perfect paired with a simple homemade vinaigrette ( balsamic, olive oil, salt and honey ) on a simple salad ( we had romaine with red onions and chick peas)
