Mid Week Update....

I finding that certain foods will fill me up and get me through my mornings more than others....I LOVE having a green juice every a.m. however if I know I'm going to be crazy busy and unable to grab lunch until late afternoon I'm finding I need something a little more substantial.  So, yesterday I made a delicious ( and filling ) Peanut Butter and Chocolate Smoothie for breakfast.
Peanut Butter and Chocolate Smoothie - vegan
1 cup Vanilla Almond Milk
 1 Tb Organic non- GMO Lecithin
 ( good for energy, brain and nerve function and has a wonderful creamy consistency when blended in a smoothie! )
1 tsp Maca
2 Tb Raw Cocao Powder
frozen Bananas
1 Tb Organic Peanut Butter

This tied me over until I was able to have my typical cafeteria lunch of a Whole Wheat Sandwich with Tomato, Avocado, Red Onion, Lettuce and a slice of cheddar....

Gym ( June 29th )
40 minutes/Hills level 6 on the Elliptical Machine
 3 sets of each on weight machines using 20-30 lbs
150 abdominal crunches

Pearled Couscous Greek Salad - vegetarian
Local Arugula
Organic Grape Tomatoes
Kalamata Olives
Sheep's Feta
Lemon Juice
Sea Salt
White Pepper
Toasted Pine nuts

Side Salad
mixed colored Organic Baby Romaine
Dressing made with Organic Balsamic, Meyer Lemon Olive Oil, Salt, Black Pepper, Raw Organic Agave and Organic Mustard

Food and Workout Log for June 30th
Breakfast taken to work....
Oroweat Sandwich Thin
Organic Peanut Butter
Raw Agave
sliced Local Banana

I was actually able to finish my work day around 12:30! So I headed to the gym and then came home to make a frosty Acai Parfait for lunch.

40 min/Hills level 6 Elliptical Machine
weight machine 20-30 lbs
150 abdominal crunches
Acai Parfait-vegan
1 cup coconut water
1 frozen local Banana
1/2 cup frozen Organic Blueberries
1/2 cup frozen Organic Strawberries 
1 packet frozen Sambazon Acai Puree
( place all in high speed blender )
layer with fresh Bananas

Remember all those Mangoes Carlos and I picked last week??? Well, They're getting ripe!
I saw an yummy looking Mango, Cucumber and Chick Pea Salad in Terry Walter's "Clean Food" and used it for inspiration tonight........
Mango, Chick Pea, and Cucumber Salad-vegan
2 Large Local Mangoes diced
1 large Organic Cucumber diced
1 can Organic Chick Peas rinsed/drained
1/4 cup Golden Raisins
handful of chopped Organic Apple Mint from my garden
1 tsp Hot Pepper Flakes
pinch of Salt
pinch of cracked White Pepper
2 tsp Organic White Wine Vinegar
1 Tb lemon juice
2 Tb local Macadamia Nut Oil

I also cooked up some thin sliced Yams.
1 very large Organic Yam
juice of 1 lime
Macadamia Nut Oil
Maldon Salt
Red Pepper Flakes
And rounded the meal off with some Sheep's Feta,  Baby Greens and Balsamic.....

Tucson, Arizona.
You see, Carlos ordered this for me on Ebay about a month ago and accidentally sent it to my dad's house in the middle of the desert. So, my dad then mail it back to me in Hawaii. He sent it Parcel Post so shipping would be under a million dollars and apparently it spent the last 3 weeks sailing across the Pacific on a paddle board.....
 Happy it's here! Now, I just need to figure out what to do with it....

Very quick Food Log and Workout Update!

Sunday is my Monday so I started my week with a delicious vitamin packed fresh juice from the Juicer this a.m.

1 peeled Organic Navel Orange
2" fresh local ginger
5 Organic Carrots
1 Organic Large Cucumber

For lunch, I brought in 2 slices of Rudy's Whole Grain Organic Bread and an Avocado and I made myself an unpictured veggie sandwich with some tomatoes and lettuce from the Cafeteria.

After work I headed to the GYM.
30 minutes/Hills level 6 on the elliptical machine
Followed by weights working the chest and back until I was kicked out at 6pm? Since when does the gym close at 6 on Sundays?? Lame!

I grabbed some White Kula Corn.....
And some local fresh Ginger and Green Onions......
and made one of my favorite light summer soups from Bill Granger's " Bill's Sydney Food"!

We paired this with some Sticky White Rice and a Salad of mixed Baby Lettuce and Organic Carrots.  I also made a tasty salad dressing using Organic Peanut Butter, Agave, Organic Brown Rice Vinegar, lime, Sriratcha, Tamari and chopped Chives from the garden.

World Cup and Bowl Food

I've always thought of myself as pretty lucky that I don't live with a sports obsessed man. I mean don't get me wrong, Carlos loves his surfing and Disk Golf  but what I'm really saying is that it's nice to not have the constant drone of Sports Center in my home these days.....
We have a TV. However, it's unplugged, old, clunky, broken ( hence the deformed screen ) and lives in the spare bedroom most of the year collecting dust. Now and then he'll roll it out to watch a movie or The Super Bowl but that's really about it. That is of course until about 2 weeks ago when World Cup started......
This guy is absolutely crazy for soccer.....
Here he is watching the US lose to Ghana. Lucky for him he's from Argentina and they're still in it.
To be honest, I don't know much about the sport. Carlos tries to explain things to me but I just can't keep up.  All I can hear coming from the TV are annoying horns and all I see are smoking hot men......Does anything else really matter?
Anyway, Carlos and I started dating a couple of months after the last World Cup so I've never actually watched one until now. Lucky for me, they only come around once every 4 years.
( Although, I could get into that team from Portugal..... )

A yummy salad using some surplus ingredients from my pantry, garden and fridge.
Summer Salad - vegetarian
1 Hass Avocado diced
5 small Olowalu Roma Tomatoes diced
1 can rinsed and drained Organic Chick Peas
2 ears of Kula White Corn ( raw )
2 oz Sheep's Feta crumbled
1 Tb Green Onions minced
1 handful of chopped Cilantro
2 tsp Hot Chili Flakes
Sea Salt
1 Tb Meyer Lemon Olive Oil
1 Tb Organic Red Wine Vinegar

And then I needed Chocolate...Stat!
I made these....Can you believe it? And guess what....they're vegan and they're RAW!
So Decadent!

Chocolate Truffles-Raw Vegan
1/3 cup Raw Organic Cocao Powder
1/2 cup Raw Organic Agave Syrup
1/2 cup Raw Organic Coconut Oil
1 tsp Organic Vanilla Extract ( not really raw...)
pinch of salt
Mix everything together until super smooth. Place in freezer until firm. Use a melon baller to scoop out the chocolate and roll in whatever toppings you want. I used raw cocao and coconut flakes. This makes about 10 truffle....FYI-Store in Fridge :-)

Date Night

     Yesterday my day started with a 4 hour wait at the Audi Service Center.
Mini raw vegan lunch from "Down to Earth" in Kahalui.
Zucchini and Raw Marinara...Very yummy but $$.

Lucky for me, Audi is next to Borders, Pier 1, Old Navy and a health food store.....I hate getting my car serviced because I feel like I lose my whole day. But, preventative maintenance is key and must be done.

"Down to Earth" has the best bulk food section ( I think ) on island.

I don't I've ever seen Cocoa Pods in a store before? Pretty cool! These were Maui grown....

When I got back to the West Side, Carlos and I decided to grab a quick dinner at "Maui Tacos" because we had tickets for the Kapalua Food and Wine Festival at 6pm!
1 Veggie Taco with Pinto Beans, Rice, Potatoes, Avocado Habenero Sauce, Salsa, Cilantro, and Corn Chips ( I removed the sour cream and most of the cheese ) This thing was huge! I had no idea! Pretty nice score until $4 bucks. I actually ordered 2 of them but barely finished one. Good thing the boy was there to help....

Then off to the Ritz Carlton!

I've been wanting to go to this event for years but at $135 a ticket it hasn't really been in the budget. However, after missing the Taj Mahal concert and few reggae concerts and the Maui Film Festival over the last couple of months we figured it was okay to treat ourselves....

My favorite food sample of the night....
"Upcountry Beets and Surfing Goat Dairy Panko crusted Goat Cheese on a bed of mixed Upcountry Greens with a DELICIOUS dressing!

Honesty...I wasn't expecting so much wonderful food! I was sorry we ate before we went to the tasting :-(

Time Out!

I'm officially beat. So much so that I finally called time out and stayed home from work.....
Lucky for me I'm also off Friday and Saturday so I'm hoping to catch up on some much need sleep.
Green Juice!
1/2 lb Local Organic Kale
1 Small Local Lemon ( with rind )
2" Local Fresh Organic Ginger
1 Organic Gala Apple
1 Huge Cucumber 

I drank a ton of this all morning long.....I really felt like crap when I woke up ( tired, swollen tonsils, headache, irritated tummy ( ?! ) and spent most of the morning and afternoon reading on the couch. The weather was strange today too!....Screaming trade winds and bouts of rain? Carlos was home all day as well...He lost his phone yesterday and spent about 6 hours online "researching" new ones.....3 days ago he lost his car and house keys. I have no words....

In the late afternoon he convinced me to drive into town to look for mango trees. We are in the beginning of mango season in late June so the trees in Lahaina are dripping with the heavy fruit! Problem is, most of the mango trees are in people's yards so it took us a while to find some that were wild.

Well, The $50 mango picker worked! We're stoked....Now all they have to do is ripen a bit and they should be delish!

Since we were already down in Lahaina we figured we grab some dinner at Thai Chef.
Carlos and I shared some "Veggie Spring Rolls" as usual.
And I had my favorite vegan ( no shrimp paste ) "Green Papaya Salad" on island.
Good thing the boy didn't lose his wallet.......

I'm still here!

Aloha, Sorry to have disappeared but work the last few weeks has pretty much knocked me out of commission. I'm not exaggerating when I say I have been working 10-12 hour days with no time off.
Anyway, I have today free and then I'm back at it tomorrow....I'm exhausted. One day off is NOT enough.
I miss the beach, I miss the gym, I miss writing, reading, my man, silly cat and I miss sleeping in.  I need to figure out how to manage my life better outside of the office now because all I want to do when I get home these days is lay down or have a glass of wine ( or 2 ).  Just so you know, this is not how I want to spend my off hours.
Here's my somewhat "normal" day so far.....

Woke up at 6:30 ( because that's what I do all the time now )

Juice from the Farmer's Market....
Organic Apple, Lemon, and Cucumber
And a Larabar.....

Surfing ( about 1 hour at Kaanapali Point until the wind kicked up )

 Acai Bowl-Vegan
Acai Puree
Frozen Local Bananas
Organic Frozen Blueberries
Frozen Strawberries
Almond Milk
( blend in Vita Mix )
Topped with Lydia's Apricot Raw Cereal and Local Bananas

2 hour nap ( FYI- I never do this but I feel like I might be coming down with something....head hurts, stuffy nose, etc....lame )
Snack of Sauteed Kale, Ginger and Green Beans from the Farmer's Market.
I topped this with some Hot Sauce....yum!
I had a fresh "Maui Gold" Pineapple that I could no longer ignore so I decided to whip up one of my favorite cold raw soups from "Raw Food Real World".
"Pineapple-Cucumber Gazpacho" with Jalapeno, Green Onion, and Cilantro.
The recipe makes a huge batch so I'm planning on eating this over the next few days :-) 
I added 1 whole Avocado, Cilantro, Mac Nut Oil, and Hot Chili Flakes :-)

Over the last couple weeks I've been doing my best to eat as well as possible....I did make some home cooked meals and I even was able to go out to a eat a couple of times. Here's some of the highlights :-)

Homemade "Organic Pea and Tofu Pot Stickers" with Tamari and Rice Wine Vinegar Dipping Sauce.

The best pan of "Roasted Veggies" - vegan we've ever made!
Organic Carrots
4 kinds of Potatoes ( Red, Purple Molokai, Okinawan, and a Yam )
Maui Onions
Bosc Pear
Organic Gala Apples
Whole Organic Garlic Cloves
Golden Raisins
Minced Herbs from our Garden ( Rosemary, Italian Parsley, Tarragon )
Lemon Juice, Reduced Balsamic Glaze, Organic Olive Oil, Red Chili Flakes
Roast for about 50 mins at 400 degrees
We paired this with Couscous cooked in Orange Juice and Organic Feta Cheese.

Dinning out........
This place rocks...."Ohana Tacos" is parked in Honokowai ( near the Fish Market on the Lower Honoapiilani Hwy ) Mon-Fri 6-10pm
I had 2 killer "Veggie Tacos" with Salsa, Rice, Beans and Marinated Spicy Onion Salad. This was a score for $6. I think we've eaten here 3 times this week because I've been too tired to cook and clean..

"Tropica" at the Westin....
One of the best perks about living in Hawaii is all of your friends either work in the hotel or restaurant Biz.
This translates to really nice hook ups!
 After a really long day my buddy Jeremy insisted I meet him out for dinner and drinks. I'm really happy I went because everything was awesome!

However, This ( we both agreed ) might be the best dessert we have EVER had!

We both left so stuffed we could barely walk. Unfortunately for Carlos, I didn't bring home any leftovers.....

ROY'S in Kahana
On Monday we ended up at the Roy's Bar in Kahana because I was ( once again ) too tired to do much else.
I had a delicious mini Pizza made with Goat Cheese ( Surfing Goat Dairy ), Rocket and Local Tomatoes...
It hit the spot!
And of course...You can't go to Roy's and not have their famous Chocolate Souffle! Carlos and I split this ( that means I got one bite )
It was as decadent as always....
( I also had a glass of Oregon Pinot Gris )

Honorable Mention....
Before signing off I just have to say how happy I am once again that I finally have a Whole Foods here on Maui. Just look at this beautiful lunch I had a week ago.....I swear, if Whole Foods wasn't an hour drive away from my hale I would eat there every single day.....WF you are fabulous ( and no more $$ than Safeway in Hawaii! )
