BREAKFAST-"Purple Monster" ( organic Blueberries, 1.5 frozen local Banana, frozen local Mango, 1 cup Almond Milk, 1 scoop "Amazing Meal" )
LUNCH-Vegetable Sushi from Safeway ( Brown Rice, Carrots, Avocado, Cucumber, Wasabi, Shoyu ) while running errands.....I really need a smaller camera!
DINNER-"Spicy Coconut Pumpkin Soup", "Mary's Gone Cracker's no gluten crackers, recipe below, 1 glass "Monkey Bay" New Zealand Sauvignon Blanc
*SPICY COCONUT PUMPKIN SOUP* VEGAN
1 can 14.5oz organic pumpkin puree ( not pumpkin pie filling! )
1 can 14.5 coconut milk ( I used FULL FAT )
2 cups organic vegetable broth
1/2 to whole lime, juiced
1 inch of fresh ginger grated
2 heaping Tbs local Honey or Agave for Vegans
1.5 tsp of Sea Salt
1 Tb curry powder ( or omit if you are deathly afraid....Erin )
1 tsp. cumin powder
1/4 tsp or more cayenne powder
Combine all ingredients in a large pot over med heat. Garnish with red pepper flakes or chopped cilantro. Goes well with Jasmine rice.
AUGUST CHALLENGE-Dairy Free- 7 days......Asian food. This is a vegans best weapon!
